Mediterranean stuffed avocados

These healthy Mediterranean stuffed avocados are ready in only a few minutes using a handful of fresh and convenient ingredients. Store any leftover salad stuffing in the fridge for a quick packed lunch.


MEDITERRANEAN STUFFED AVOCADOS

Serves 2 - 4

2 large Haas avocados

Mediterranean Salad

350g jar chickpeas, drained and rinsed

350g / 2 small cucumbers, diced

1 medium tomato, diced

1 shallot, diced

1 cup fresh coriander and dill leaves, chopped

10 kalamata olives, pitted and halved

3 tablespoons extra virgin olive oil

juice of 1/2 lemon

1/2 cup crumbled Greek feta cheese

sea salt and freshly ground black pepper

  1. Mix the salad stuffing ingredients in a medium sized bowl. Check seasoning and set aside.

  2. Halve the avocados and remove the seeds. Arrange onto a platter and generously top each avocado half with the salad stuffing. Serve any leftover salad on the side or store in the fridge for a healthy prepped salad.
