Greek shrimp kebabs with tzatziki
As barbeque season approaches, mix up your usual grilled recipes with these quick and tasty marinated Greek shrimp kebabs. Pair with a wide array of seasonal vegetables (cooked or raw) and a quick tzatziki sauce on the side for a low carb meal, or add a warm pita bread for the picky palates in the family.

GREEK SHRIMP KEBABS WITH TZATZIKI
Serves 4
1kg black tiger prawns, fresh or thawed, peeled and deveined
Marinade:
2 cloves garlic, crushed
3 tablespoons extra virgin olive oil
juice of 1/2 a lemon
2 teaspoons dried oregano
1/2 teaspoon dried chilli flakes
1/2 teaspoon sea salt
Freshly ground black pepper
Mix marinade ingredients in a glass container. Add the shrimp and toss to coat. Cover and refrigerate for 30 minutes.
Thread shrimp evenly between stainless steel skewers. Grill for 2-3 minutes per side or until pink. Do not over cook!
Enjoy with tzatziki on the side.
