Soup season isn’t over yet. As the weather warms up, tomatoes are coming in are tastier and juicier than ever. Tomatoes are a natural source of Lycopene which benefits from being cooked, unlike other foods which may lose their some of their nutrients during cooking. Avgolemono soup

“Egg-lemon” soup may not sound like an appetising soup based on the direct translation from the Greek “Avgolemono”. The soup is actually a humble chicken and rice soup, thickened with egg and flavoured with freshly squeezed lemon. It's comforting and satisfying without being too heavy.

One of the best food ingredients you can have in your kitchen (other than fresh produce) is a good quality chicken stock.  Making your own not only ensures a healthier bone broth but also imparts a wonderful flavour and aroma to many dishes than the shop bought cube stock.
