Herb hummus
You can never have enough hummus recipes, right? Whether you choose to serve your hummus with crackers, pita bread or vegetables, this fresh herby hummus is the perfect make-ahead recipe for a quick healthy snack or add it to your favourite mezze board.
HERB HUMMUS
Makes about 2 cups
1 1/2 cups cooked chickpeas, drained
1/4 cup tahini
1/4 cup extra virgin olive oil
Juice of half a lemon juice, to taste
1/2 cup chopped chives
1/2 cup dill & parsley
1 clove garlic
1/2 teaspoon ground cumin
1/2 teaspoon sea salt
3/4 cup crushed ice
Place all the ingredients, except the ice, into a food processor and blend until combined and thick.
Add the crushed ice and blend for about 2 minutes until the dip becomes smooth.
Serve drizzled with extra olive oil.
