Mushrooms with garlic & thyme
Earthy and “meaty” mushrooms sautéed to perfection with garlic and fresh thyme. Mushrooms are not only flavourful but high in antioxidants, fiber and low in calories, which makes them an ideal ingredient in many healthy recipes.
This recipe works well with any common variety of edible mushrooms.
MUSHROOMS WITH GARIC & THYME
Serves 2-4
150g Shimenji mushrooms
150g Oyster mushrooms
150g Portabellini mushrooms
150g Shiitake mushrooms
4-5 cloves garlic
2-3 sprigs thyme
3 tablespoons extra virgin olive oil
Sea salt & ground black pepper
Clean the mushrooms by either wiping them or give them a quick rinse and pat dry. Trim any spoilt bits and set aside. Peel and halve or quarter the garlic lengthways.
Heat the olive in a large non-stick pan. Add all the garlic and thyme and sauté on medium heat for about 2 minutes, to flavour the oil.
Add all the mushrooms to the pan and season. Sauté mushrooms for about 10 minutes until they are well cooked and golden. Discard thyme and serve warm.
