Winter salad with apple, rocket & tahini-herb dressing
Apple, feta and pomegranate combine with a medley of raw winter vegetables, and a fresh herb tahini dressing for a satisfying no-cook salad. Serve as a light lunch or side.
WINTER SALAD WITH APPLE, ROCKET & TAHINI-HERB DRESSING
Serves 2-4
100g wild rocket
1 red apple, halved and sliced
1 medium carrot, peeled and thinly sliced
1 red radish, thinly sliced
1/4 cup pomegranate
100g feta cheese
Tahini dressing
1/2 cup tahini
1/2 cup water
Juice of 1 lemon
1 clove garlic
2-3 sprigs each of dill and coriander
1/4 teaspoon sea salt
Arrange the salad ingredients in a large platter or bowl, starting with the rocket, carrots, apple, radish, then finishing off with feta and pomegranate.
Blend the dressing in a high speed blender until smooth. Drizzle over the salad and serve immediately.
Tip: Store any leftover dressing in the refrigerator. To use again, add a few drops of water to the dressing if it becomes too thick. Shake well and drizzle over your salad.
